SUMMARY
Performs a variety of kitchen duties including large quantity cooking, ordering food and supplies. Responsible for planning, preparation and serving of meals. Maintains cleanliness of kitchen, dining and storage areas. This individual is a journey level cook who may be responsible for kitchen operations up to two days a week.
ESSENTIAL DUTIES AND RESPONSIBILITIES
(Other duties may be assigned)
Prepares cooks and serves patient meals to include special diet needs.
Plans meals which are nutritious, flavorful and attractive for patient’s guests and staff with a focus on low fat, low sugar with an accent of fresh vegetables and complex carbohydrates.
Orders food and maintains inventory within the allotted budget.
Monitors and maintains infection control, safety standards and procedures for all food preparation, storage, and delivery areas as per Department of Health requirement and recommendations and NWITC policies.
Ensures proper storage of all food and kitchen supplies.
Informs Treatment Director or Clinical Coordinator of any potential or actual problems related to preparation, supply, storage, care, or cleanliness of food or kitchen supplies which could affect the safety or health of patients and staff.
Unpacks food and stores appropriately.
Clean ranges, oven, broiler, grill, deep fryer, steamers, sinks, refrigerators, salad bar, ice machine, and coffee areas daily.
Empties garbage, and washes dishes, cleans kettles, tables and other surfaces as needed.
Responsible for weekly cleaning i.e. washing the baffles over the stove, stove sides, grill surface refrigerators, hot food server and salad bar.
Prioritizes appropriately to meet all meal and other agency schedules.
Provide meals which are nutritious, flavorful and attractive for patient’s which are the correct food temperature and thoroughly cooked.
SUPERVISORY RESPONSIBILITIES
This position has no supervisory responsibilities.

EDUCATION and/or EXPERIENCE
High School Diploma or GED and one year of relevant experience Working in a facility as a cook responsible for ordering food/supplies, planning menus, cooking large quantities, and maintaining cleanliness of a kitchen, dining and other food areas OR 3 years of relevant experience. Must have knowledge of Washington State Department of Health requirements for food health and safety. Experience working with Native Americans is preferred.

LANGUAGE SKILLS
Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.
MATHEMATICAL SKILLS
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common factions, and decimals.
REASONING ABILITY
Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
CERTIFICATES, LICENSES, REGISRATIONS
Must have and maintain a valid Food Handler’s Permit and First Aid Certificate, or obtain one within 30 days of hire. Must have a Washington State Drivers License and be insurable per tribal standards.
OTHER QUALIFICATIONS
The successful candidate must be able to pass a criminal and employment background check. Applicants who have been a patient of the NWITC programs must have completed services for a minimum of six months and should have six months of sustained recovery

While performing the duties of this job, the employee may occasionally be exposed to warm, wet and/or humid conditions (non-weather and weather), and work near moving mechanical parts or be at risk of electrical shock. The noise level in the work environment is usually moderate.
